Barrel-aged coffee begins with green, unroasted beans resting in barrels that previously held spirits. Over time, the beans absorb aromatic characteristics from the wood and the barrel’s former contents, developing a distinctive character before they ever reach the roaster.
We adjust the aging time for each lot, considering the barrel’s age, the coffee variety, and the intended roast. Each month tastes a bit different, but the result is a bold cup with notes of Irish cream, oak, molasses, and spice that mingle with the coffee’s own character.
No. No liquor, alcohol, or flavoring is added to the coffee at any stage. The barrel-aged coffee beans develop their character while resting in barrels that once held bourbon whiskey or rum.

• Orders process on the 27th of each month. We roast your coffee after your subscription renews.
• The cutoff for new orders is the 26th. Because club coffees are curated and roasted once per month, orders placed after that date are reserved for the following month’s processing and roast cycle.*** See examples below.
• Orders ship between the 1st and 5th of the following month.
Due to holiday volumes, the cutoff for December delivery is November 15. If you join after November 15, your first order will process on December 27 and ship between January 1 and 5.
